Want a tasty treat but low on your usual array of naughty tidbits (think chocolate chips, mini M&Ms, etc)? Chances are you have the ingredients in your fridge to whip up this supremely delicious, albeit caloric, Buttermilk Pie. Limit yourself to one piece and you can enjoy the goodness for several days without increasing your waistline.
Buttermilk Pie (no crust)
1 stick melted butter
1-1/2 cup sugar
1/2 cup flour
1 tsp vanilla
1 cup buttermilk
Directions for Buttermilk Pie preparation:
- Spray Pam onto a glass pie plate approximately 8 inches in diameter.
- Preheat oven to 325 degrees.
- Mix all ingredients together thoroughly. Easy to blend by hand but use a mixer if desired.
- Pour into pie plate.
- Bake until golden on top (approximately 25 minutes)
Stir your dry ingredients (the flour and sugar) together first before mixing in the liquids. It will help you avoid lumps and extra stirring time later.
Preparing this pie without a crust helps cut the calories and keep your focus on the rich taste and texture of the pie. I think it makes it more satisfying.
